normally, after the picture sensor record down what it saw in the scene, it will do some post processings, e.g. white balancing, sharpening etc. etc. and then the file will be compressed saved as JPEG.

sharpening and JPEG compression both 'destroy' the original information recorded and those information can never be restored. So in order to retain every bits seen originally by the image senser, PROs would like to save the file as RAW and then do the post processing themselves in later stage, and the RAW file can then be safely archived for future uses just in case.

Good point is you always got the original and worry-free to mess around the pictures later, but bad is the RAW file usually a lot bigger than compressed JPEG. e.g. 5M pixel DC RAW output is nearly a file of 8M.

oh yes, to answer your question, yes, picture quality will be higher as its not compressed as JPEG.

yes, i also use the bundled software to do the conversion, the nikon software will also install a plug-in for photoshop.
