If you want image to be sharp right out of camera :
set all to normal or high.

If you want to do post processing :
set all to low.

I always set all to low including ISO 50

Why day and night setting are different ?

I set ISO to 50
Sharpness and Contrast to LOW
Color Saturation to NORMAL.

For sunrise shot I set saturation to high because I want to bring out more color.

This one was shot with saturation high, contrast low, sharpness low.
Post processing :
USM 70, 0.5, 0
Saturation 15
Contrast 8

Gradual Neutral Density filter was used to reduce the brightness of the sky.
