If I am not mistaken, your 1 point, 3 point, 5 point are "Spot", "Center Weight" and "Multi Segment".
Spot - use it when you want a small object in the whole picture to have correct exposure, don't care about the rest. e.g. a small candle in a room, a small pet in a big room with limited lighting, you only want the object visible. Metering is effective in a very area, like focus mark on the viewfinder only
Center Weight - (mostly used, older cameras, old SLRs are more or less center weight only) use it in most occasions, for 60% of metering is concetrate in the center of the picture, 40% on the rest of the composition. Center weight is good for portrait
Mutli Segment - you know what it is, average is taken from many areas. Good of scenery.
